WTB Tip : There is a lot of talk about No Carbs & Low Carbs , but is it really advisable to cut down on carbs ?🧐🧐🧐Well , my answer would be NO . 🔥Week 2 Meal Prep & My Week 1 Program Reflection🔥
This week i am really trying to stick to my times nutrition plan. I did really well during the week, I’d give myself a B, but this weekend i struggled. I ate healthy, but didn’t follow my plan 100%. I realized that I’ve never given a thought about what i will eat on the weekend, so when it comes i go out or eat convenient options. So today, with the help of my fiancé, i went shopping and made sure i had options and enough food to get me through next weekend. I also typed out all my times and foods so that i don’t forget what to eat when. .
Week 1 Feels: 🙂 i am so excited that i started this program and have kept to it so well thus far! I was sore most of the week, but it felt amazing. 💪🏼 The crazy pyramid cardio workout on Saturday was my least favorite. I was a little disappointed that i only lost 1 pound this week after seeing others have more drastic changes, but i feel so good and so much stronger already. I won’t let the scale get me down, although it is a change i hope to see. I got 2 headaches towards the end of this week. Thankfully i caught them before they turned into migraines. The added sugar/ caffeine detox is going strong. .
Week 2 Intentions: 💁🏼 This week i want to make sure I’m getting up early and participate in more team workouts. I also want to eat as close to my timed schedule as possible while being at school. I also want to use my extra energy to get some wedding things done.
😋 Peach Tostadas & a Saveur Nomination 😋
Preheat the oven to 450°F and line a baking sheet with parchment paper.
Make the Creamy Green Chili Sauce: Remove the husks from the tomatillos and rinse under cool water to remove the stickiness. Place the tomatillos, onion and green chiles on the baking sheet and drizzle with olive oil. Add a generous pinch of salt and toss. Place the wrapped garlic on the pan. Roast for 15 minutes or until the tomatillos are soft and the skin of the green chiles has lightly blackened. (Alternatively, you can char the vegetables on the grill.) Remove from the oven and let cool slightly. Once the green chiles are cool to the touch, remove the stems, ribbing and any loose skin. Peel the garlic.
In a food processor, combine the cooked tomatillos, onion, green chiles, garlic, and a few generous pinches of salt and pepper. Pulse, then add the pepitas, avocado, spinach and lime juice. Blend until smooth and taste. If it’s too tart, add a drizzle of olive oil and honey. Season to taste with salt and pepper. Chill until ready to use.
Place the corn tortillas on a baking sheet and spray each with a little olive oil and sprinkle with a few pinches of salt. Bake until crispy, 10 to 15 minutes, depending on the thickness of the tortillas.
Place the refried beans in a small bowl. If they’re not already seasoned, add a drizzle of olive oil and a pinch of salt and stir.
Assemble the tostadas with the refried beans, peaches, tomatoes, and generous dollops of the Creamy Green Chile Sauce. Sprinkle with the pepitas and cotija cheese, if using. Serve with lime slices on the side.

How to make:
•empty 1/2 cup of oatmeal into a bowl and add 1/2 cup almond milk
•stir in 1/2 teaspoon vanilla extract and microwave for 1 minute
•microwave @traderjoes wild blueberries for 20 seconds and add to oatmeal
•slice half a banana over oatmeal
•add melted almond butter, maple syrup, and chia seeds

Hump Day is here! 🙌🏼 Packed this pesto & veggie quinoa salad for lunch today and I can’t waiiiiit to eat it 😍 All I did was mix diced bell peppers, red onion, grape tomatoes and spring mix with cooked quinoa & then tossed it all with pesto and sprinkled with feta. Gotta love when lunch comes together in like 5. 🙋🏻♀️

Feeling A LOT better today but breakfast didn’t sound good to me, so I just sipped on my matcha latte all morning and took it real slow😌
Just whipped up this veggie bowl full of sautéed red cabbage (most underrated vegetable), avocado, Japanese sweet potato, broccoli, raw walnuts, and a dollop of @thehummuspeople hummus. Random, but oh so satisfying!

Currently: 5-minute breakfast skillet topped with homemade pesto 🙏🏼 I prepped some sweet potatoes the other day, making this so simple to throw together this morning. Perfect post-gym fuel 💪🏼 happy wednesday •• ______________________________________
Add potatoes to skillet with melted ghee, crack eggs over potatoes, cover and cook until egg whites are cooked. Uncover and add spinach to let wilt.
For pesto: I blend basil, baby spinach, olive oil, garlic, s + p. Blend and taste test until ready.

You haven’t truly tested your patience until you’ve caramelized onions 😬 But those extra 45 minutes are SO worth it for this sweet potato crust quiche with roasted brussels and rich, flavorful caramelized onions. This might be the best thing I’ve ever made and I am so pumped it’s on repeat for breakfast on Week 3 of @whole30 🍳🍴Recipe here 👉🏻 Slice a sweet potato into half moons and line them on the bottom and along the sides of a casserole dish spread with Ghee (it’s okay if they overlap!) Place in 400°F oven for 25 minutes. In the meantime, get started on the onions. Heat a pan on the stove with 2 tbsp. Ghee or olive oil. Add the onion, keeping on low heat and occasionally stirring until onion is brown and caramelized (will take about 45 minutes, so you can move on to the next step while keeping an eye on them!) Chop 2 large handfuls of Brussels sprouts in half and place on baking sheet. Drizzle with olive oil and salt and pepper and roast in oven for 15 minutes. Remove the sweet potato crust from the oven and let cool. Whisk together 8-10 eggs with 1/4 cup nutritional yeast, salt, and pepper. When brussels and onions are ready, add them to the sweet potato crust then top with egg mixture. Place back in oven for 25 minutes or until eggs are cooked though and crust is crispy! Super easy to grab a slice to go in the morning and warm up at work 😋
