Keep it simple. That is my mantra these days. As a working mom with three kids age 10 and under I don’t have the time I once did to create intricate, well planned out dinners. But at the same time, I love to cook and I care deeply about eating healthy and feeding my family nutritious meals. What’s sort of well... perfect, about this whole dilemma, is that foods that are prepared and consumed in their most simple form are actually the most healthy for us. So I don’t feel guilty about the fact that I don’t have hours to spend in the kitchen cooking up ornate dishes. Real, clean, whole foods prepared in simple, quick methods are the best for our bodies and also happen to be best for our piece of mind. So tonight, dinner was as simple as this. Salmon, olive oil, lemon zest, lemon juice, garlic, salt, pepper. Roasted asparagus and roasted potatoes with green onions. Simple. Healthy. Delicious. Perfection. .
